5 Minute Vegan Greek Salad

5 Minute Vegan Salad Healthy Heart Cold Pressed Extra Virgin Olive Oil

This quick & easy Vegan Greek salad recipe is a flavourful, refreshing summer dish! If you make it ahead for a gathering, save a few basil leaves to add right before serving.

PREP Time: 5 mins OR 10 mins with dressing | SERVES 4

Ingredients

  • 1 tbsp sussed Healthy Heart Cold Pressed Extra Virgin Olive Oil
  • 1 bag mixed greens
  • 250g halved cherry tomatoes
  • 150g vegan feta cheese, cut into ½ inch cubes
  • 60g pitted Kalamata olives
  • Fresh basil leaves

Preparation

Arrange the mixed greens, cherry tomatoes, vegan feta cheese, and olives in a large bowl. Drizzle with sussed Healthy Heart Olive Oil and toss very gently. Sprinkle with some fresh basil leaves, season to taste and serve.

If you have another 5 minutes to spare, this delicious dressing can be used instead of the plain Olive Oil:

Dressing

  • 3 tbsp sussed Healthy Heart Cold Pressed Extra Virgin Olive Oil
  • 3 tbsp red wine vinegar
  • 1 garlic clove, minced
  • ½ teaspoon dried oregano, more for sprinkling
  • ¼ teaspoon Dijon mustard
  • ¼ teaspoon sea salt
  • Freshly ground black pepper

Make the dressing: In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt, and several grinds of pepper. The dressing can be stored in the refrigerator for 1 week – always shake before use.
