This quick & easy Vegan Greek salad recipe is a flavourful, refreshing summer dish! If you make it ahead for a gathering, save a few basil leaves to add right before serving.

Arrange the mixed greens, cherry tomatoes, vegan feta cheese, and olives in a large bowl. Drizzle with sussed Healthy Heart Olive Oil and toss very gently. Sprinkle with some fresh basil leaves, season to taste and serve.
If you have another 5 minutes to spare, this delicious dressing can be used instead of the plain Olive Oil:
Make the dressing: In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt, and several grinds of pepper. The dressing can be stored in the refrigerator for 1 week – always shake before use.
