Perfect for gatherings, this easy and attractive Caprese Salad with cherry tomatoes, mozzarella & olives has all the flavours of summer.
PREP Time: 10 mins / TOTAL TIME: 10 mins / SERVES: 4 to 6
Halve the cherry tomatoes & olives.
Cut the mozzarella into ¼″ to ½″ slices.
Arrange the tomatoes, mozzarella & black olives on a large serving platter. Sprinkle basil leaves all over, and spray with sussed 2cal Spray Olive Oil. Sprinkle generously with salt and pepper.
For the best flavour (if you have the time), let the salad rest for 30 minutes so the tomatoes release some juices and the flavours have time to mingle. This salad is best served within a few hours. Leftovers will keep, covered and refrigerated, for up to 3 days.
