This recipe is really versatile – just use your own favourite blend of mixed vegetables, and if the weather isn’t great for grilling, pop them in the oven on a roasting tray instead!
PREP Time: 10 mins / TOTAL TIME 40 mins / Serves 6
Preheat the grill to 230 – 260°C range surface temperature (or medium-high). Or if using oven, 180°C.
Prep the veggies you want. Grilling times: Baby carrots 25 minutes; Broccoli, aubergine, and courgette 15 minutes; peppers, corn on the cob, onions & mushrooms 10 minutes.
Coat the vegetables with a few sprays each of sussed 2cal Spray Rapeseed Oil & 2cal Spray Balsamic Vinegar and season with some salt and pepper to taste.
Start grilling with a closed hood and stir every 5 minutes. Carrots first, then at the first stir, add the broccoli, aubergine, and courgette. At 10 minutes into cooking, add the peppers, corn on the cob, onions & mushrooms.
