• 1 Tbsp Healthy Heart Plus Omega 3 DHA Oil
• 1 Lobster
• 1 Lemon
• 4 Cherry Tomatoes
• Splash Oyster Sauce
• Handful Baby Salad Leaves
• Decorative Radishes
• Dill and Pesto for decoration
FIRST COOK YOUR LOBSTER:
The kindest way to dispatch a live lobster is to use a sturdy, sharp knife and push the tip firmly and quickly through the centre of the cross on its head, making sure the blade side is directed towards the tail – this should kill it instantly. Once killed, lobsters are normally boiled. A whole lobster (approx. 500g) should take about 4 minutes to cook. Once cooked, the shell of a lobster will turn a vivid red and the juices that seep from the shells will start to coagulate.
NOW DRESS YOUR LOBSTER:
Place the whole lobster on a large serving dish. Mix your Healthy Heart Plus Omega 3 DHA Oil with your oyster sauce and lemon juice. Scatter some baby leaves, quarters of cherry tomatoes, thinly sliced radish around the lobster. Sprinkle with your dressing, adding dabs of dill and pesto for colour.
SERVING YOUR LOBSTER:
After cooking, leave your lobster to cool before pulling off the claws, in order to crack them and remove the luscious white meat. Pull off the tail and peel it, as if it were a large prawn to enjoy the lobster meat.
