Zesty and nutritious, this no-cook prawn salad combines fresh summer ingredients, such as mangoes and avocadoes, with a quick and easy dressing.

Put all the dressing ingredients in a jar & shake well.
Place all the salad Ingredients in a bowl & pour over the dressing. Toss very gently using a rubber spatula. Adjust to taste with more lime if desired. Serve immediately!
Alternatively, you can prepare the salad in advance, cover & chill for up to 1 hour. Only pour over the dressing when you are ready to serve.
