Mango Avocado Prawn Salad

Mango Avocado Prawn Salad Healthy Heart Cold Pressed Extra Virgin Olive Oil

Zesty and nutritious, this no-cook prawn salad combines fresh summer ingredients, such as mangoes and avocadoes, with a quick and easy dressing.

PREP Time: 20 mins / TOTAL TIME: 20 mins / SERVES: 4 to 6

Ingredients

Dressing

  • 2 tablespoons sussed Healthy Heart Cold Pressed Extra Virgin Olive Oil
  • 2 tbsp fresh lime juice, plus more to taste
  • 1 small garlic clove, minced
  • ½ tsp freshly ground salt & black pepper

Salad

  • 2 large firm-ripe mangoes
  • 2 medium firm-ripe avocados
  • 250g cherry tomatoes halved
  • 100g mixed salad leaves
  • 1 tablespoon each thinly sliced green onion and chopped coriander
  • 1 tablespoon minced fresh hot red or green chilli (or 1/2 tsp. dried red chilli flakes) OPTIONAL
  • 450g peeled cooked prawns

Preparation

Put all the dressing ingredients in a jar & shake well.

Place all the salad Ingredients in a bowl & pour over the dressing. Toss very gently using a rubber spatula. Adjust to taste with more lime if desired. Serve immediately!

Alternatively, you can prepare the salad in advance, cover & chill for up to 1 hour. Only pour over the dressing when you are ready to serve.
